<p><strong>Dear EarthTalk: What are the differences between farmed versus wild salmon when it comes to human and environmental health?</strong></p>
<p>Salmon farming, which involves raising salmon in containers placed under water near shore, began in Norway about 50 years ago and has since caught on in the U.S., Ireland, Canada, Chile and the United Kingdom. Due to the large decline in wild fish from overfishing, many experts see the farming of salmon and other fish as the future of the industry. On the flip side, many marine biologists and ocean advocates fear such a future, citing serious health and ecological implications with so-called “aquaculture.” </p>
<p><strong>George Mateljan, founder of Health Valley Foods, says that farmed fish are “far inferior” to their wild counterparts.</strong> “Despite being much fattier, farmed fish provide less usable beneficial omega 3 fats than wild fish,” he says. Indeed, U.S. Department of Agriculture research bears out that the fat content of farmed salmon is 30-35 percent by weight while wild salmons’ fat content is some 20 percent lower, though with a protein content about 20 percent higher. And farm-raised fish contain higher amounts of pro-inflammatory omega 6 fats instead of the preponderance of healthier omega 3s found in wild fish.  </p>
<p>“Due to the feedlot conditions of aquafarming, farm-raised fish are doused with antibiotics and exposed to more concentrated pesticides than their wild kin,” reports Mateljan. He adds that farmed salmon are given a salmon-colored dye in their feed “without which their flesh would be an unappetizing grey color.”  </p>
<p><strong>Some aquaculture proponents claim that fish farming eases pressure on wild fish populations, but most ocean advocates disagree.</strong> To wit, one National Academy of Sciences study found that sea lice from fish farming operations killed up to 95 percent of juvenile wild salmon migrating past them. And two other studies—one in western Canada and the other in England—found that farmed salmon accumulate more cancer-causing PCBs and dioxins than wild salmon due to pesticides circulating in the ocean that get absorbed by the sardines, anchovies and other fish that are ground up as feed for the fish farms. A recent survey of U.S. grocery stores found that farmed salmon typically contains 16 times the PCBs found in wild salmon; other studies in Canada, Ireland and Great Britain reached similar conclusions.  </p>
<p><strong>Another problem with fish farms is the liberal use of drugs and antibiotics to control bacterial outbreaks and parasites.</strong> These primarily synthetic chemicals spread out into marine ecosystems just from drifting in the water column as well as from fish feces. In addition, millions of farmed fish escape fish farms every year around the world and mix into wild populations, spreading contaminants and disease accordingly. </p>
<p><strong>Ocean advocates would like to end fish farming and instead put resources into reviving wild fish populations. </strong>But given the size of the industry, improving conditions would be a start. Noted Canadian environmentalist David Suzuki says that aquaculture operations could use fully enclosed systems that trap waste and do not allow farmed fish to escape into the wild ocean. As for what consumers can do, Suzuki recommends buying only wild-caught salmon and other fish. Whole Foods and other natural foods and high end grocers, as well as concerned restaurants, will stock wild salmon from Alaska and elsewhere.  </p>

<p><strong>Dear EarthTalk: Is the dairy industry really trying to stop soy milk makers from calling their products “milk?” They must feel very threatened by the preponderance of soy milks now available in supermarkets.  </strong></p>
<p>Indeed, just this past April the National Milk Producers Federation (NMPF), a trade group representing dairy farms, petitioned the U.S. Food &#038; Drug Administration (FDA) to crack down on what it calls “<strong>the misappropriation of dairy terminology on imitation milk products</strong>.” NMPF has been asking for such a ruling for a decade, and argues that the soy industry’s “false and misleading” labeling is now more common than ever. </p>
<p>According to NMPF president and CEO, Jerry Kozak, the FDA has let the issue slide so that the meaning of ‘milk’ and even ‘cheese’ has been “watered down to the point where many products that use the term have never seen the inside of a barn.” </p>
<p>Furthermore, Kozak adds, the use of “dairy terminology” on non-dairy products can lead people to think they are eating healthier than they really are, especially because non-dairy products “can vary wildly in their composition and are inferior to the nutrient profile of those from dairy milk.” </p>
<p>The website FoodNavigator-USA.com reports that on the other side of the Atlantic, the European Dairy Association (EDA) has also called for the term ‘soy milk’ to be replaced with ‘soy drink’. EDA also suggests other options including ‘soy beverage’, ‘soy preparation’ and ‘soy-based liquid’. It’s no wonder the soy industry isn’t quick to give up the milk moniker, given how catchy the alternatives could be! </p>
<p><strong>Jen Phillips of Mother Jones magazine takes issue with the dairy industry’s sense of ownership when it comes to terms like ‘milk’, ‘cheese’ and ‘dairy’.</strong> “The word ‘milk’ has lots of uses and has been used for non-dairy milks like coconut for a long time,” she reports, adding that consumers already know that soy milk isn’t dairy milk. “Instead,” she writes, “the move to ban ‘milk’ from non-dairy products is a transparent ploy by the NMPF to hurt the soybean industry that, thanks to increasingly health-conscious consumers and ethanol production quotas, is growing stronger every year.” </p>
<p>She also disagrees with Kozak’s claim that dairy milk is healthier than soy: “Actually, soy milk and dairy aren’t that different nutritionally, except for that milk is fattier,” she says, explaining that a cup of vanilla soy milk has 30 fewer calories than a cup of two percent cow’s milk. And while dairy does have twice the protein, soy milk has 10 percent more calcium. “It’s a bit of a toss-up nutritionally, but I&#8217;m lactose-intolerant so I’ll choose the ‘milk’ that doesn&#8217;t make me gassy and crampy.” </p>
<p>Phillips adds that, since 90-100 percent of Asians and 50 percent of Hispanics—two of the fastest growing immigrant populations in the U.S.—are lactose intolerant, “NMPF might want to think less about fighting soy and more about how they’re going to deal with people who can’t drink milk to begin with.” </p>

<p><strong>Dear EarthTalk: What are the most important foods to buy organic?</strong></p>
<p><strong>Given the usual higher prices of organic versus conventionally-grown foods, it can be a challenge to get the biggest bang for our buck while eating healthy and avoiding the ingestion of synthetic chemicals along with our nutrients.</strong> One approach, say some experts, is to only buy organic when the actual edible parts of a non-organically grown food might come into direct contact with toxic fertilizers and pesticides. The nonprofit Environmental Working Group (EWG) reports that consumers can reduce their chemical exposure by some 80 percent by either avoiding the most contaminated conventionally grown fruits and vegetables altogether, or by eating only the organic varieties. To help us sort through what and what not to buy, the group offers a handy Shopper’s Guide to Pesticides, which fits on a small piece of paper that you can keep in your pocket and have handy on grocery trips. You can print it out for free from EWG’s FoodNews.org website, or you can download it as a free App for your iPhone.</p>
<p>To make it easy to use, EWG has distilled its analysis into two lists. The first, “<strong>Dirty Dozen: Buy These Organic</strong>,” lists foods that when grown conventionally contain the largest amounts of pesticide and fertilizer residues. These include peaches, strawberries, apples, blueberries, nectarines, bell peppers, spinach, cherries, kale/collard, greens, potatoes, and (imported) grapes. Consumers should definitely spend the extra money for organic versions of these foods. On the other side of the coin, EWG’s “<strong>Clean 15</strong>” list includes foods that contain the least amount of chemical residues when grown conventionally. These include onions, avocados, sweet corn, pineapples, mangos, sweet peas, asparagus, kiwi, cabbage, eggplant, cantaloupe, watermelon, grapefruit, sweet potatoes and honeydew. It’s OK to eat conventionally grown varieties of these foods. EWG analysts developed the “Clean 15” guide using data from some 89,000 tests for pesticide residues in produce conducted between 2000 and 2008 and collected by the U.S. Department of Agriculture (USDA) and the U.S. Food and Drug Administration (FDA). What’s the difference, you may ask? <strong>EWG found that by eating five conventionally-grown fruits and vegetables a day from the Dirty Dozen list, a consumer on average ingests 10 different pesticides; those who stick to the Clean 15 list ingest less than two.</strong></p>

<p>Other foods you and your family eat, such as meats, cereals, breads and dairy products, might also be exposing you to unwanted chemicals. According to EWG, the direct health benefits of organic meat, eggs and milk are less clear, but you should play it safe by sticking with all-natural, free-range, grass-fed meats that are not fed antibiotics or growth hormones, and by choosing only organic dairy products.</p>
<p>Thanks to increasing demand, more and more food purveyors are putting extra emphasis on organics. This will ultimately result in both lower prices and larger selections. Natural foods market aisles are already teeming with organic choices—and chances are your local supermarket or big box store has introduced organic versions of many popular items. <strong>Consequently, there has never been a better time to take stock of what you are feeding yourself and your family, and to make changes for better health.</strong></p>

<p><strong>Dear EarthTalk: I am a bartender in Sacramento and I would love to be able to use some sort of locally made or sustainable version of sugar. What’s out there?</strong></p>
<p><strong>It sure would be nice if we could obtain all of our food and drink items from local sources, but sugar provides an excellent example of why such a desire may remain a pipe dream in the United States for a long time to come.</strong> The sugar we consume that is produced domestically comes from sugar cane grown in Hawaii and the Southeast and sugar beet from the Upper Midwest, Pacific Northwest, California and elsewhere. However, it is likely milled and refined hundreds if not thousands of miles from where it is harvested, and then shipped all over the country—causing untold greenhouse gas emissions—in various sized packages for our consumption in our coffee, on our cereal and, for some of us, in our cocktails.</p>
<p>Massive government subsidies and land giveaways to the sugar industry in the American Southeast beginning in the early 18th century established a market for American-grown sugar despite the fact that the region’s climate was not tropical enough to grow cane efficiently. To add insult to injury, the rerouting of south Florida’s fragile water table to irrigate thirsty sugar plantations contributed to the decimation of the Everglades, one of the nation’s most unique and diverse ecosystems—and now the subject of a multi-billion dollar restoration effort.</p>
<p><strong>While you might be hard pressed to find commercially available local sugar anywhere in the U.S., you could make your own.</strong> “Years ago, when sugar was an expensive commodity, many people of lesser means made their own sugar from sugar beets,” reports writer Kat Yares on the eHow.com website. “Every farm and every home garden had a spot reserved for beets, and a day was set aside to cook the beets down into sugar.” While very few of us grow our own food these days, growing sugar beets and making sugar from scratch can be a fun, educational and tasty project for parents and kids or for foodies intent on local sourced, preservative-free  ingredients. Yares explains the whole process in her “How to Make Sugar from Beets” article on eHow.com.</p>
<p>If that all sounds like too much work, perhaps you can settle for store-bought organic sugar, which may not be local but which is at least produced without chemical pesticides and fertilizers. Florida Crystals, Hain, C&#038;H, Domino and others each offer organic sugar varieties in many traditional grocery stores coast-to-coast. There are even more choices at natural foods specialty stores (like Whole Foods). <strong>Believe it or not, there are even vegan sugars out there—that is, sugars not processed with animal-derived bone char in the refinement process. </strong> While sugar itself may be a staple item for many cocktails, some interesting alternative natural sweeteners, some of which may be locally sourced in your region, do exist. Agave nectar, honey or even maple syrup are some options that might just give that Tom Collins the extra kick it needs to make it stand out from the other bartender’s drinks down the street—or in your breakfast cereal, for that matter.</p>

<p><strong>Dear EarthTalk: Where do you recycle plastic stuff like sandwich bags, Saran wrap and plastic<br />
grocery store wrappers? Can they just go in with other plastics in the <a title="recycling" href="http://recyclingposttoday.com/category/recycling/">recycling</a> bin? There never seems to be any information available about this. </strong></p>
<p><strong>The reason you don’t hear much about <a title="recycling" href="http://recyclingposttoday.com/category/recycling/">recycling</a> these types of plastic films is that most municipalities don’t take back items intended to wrap food.</strong> One exception may be sandwich bags, which are made from easy-to-recycle polyethylene, as long as any hard (i.e. “Ziploc”) components are removed and they are rinsed free of any food debris or stains. For that matter, if you are going to the trouble to wash them, you may as well dry and reuse them at home a few times before relegating them to the <a title="recycling" href="http://recyclingposttoday.com/category/recycling/">recycling</a> bin. There are even small countertop racks available for hanging plastic bags to dry before reusing them.</p>
<p><strong>Clinging plastic like Saran wrap is problematic for recyclers because the resin that it contains (to give it wrapping power) cannot be re-extracted without massive amounts of energy—more than it takes to make it new from scratch.</strong> And given that it’s usually soiled with some kind of food, used plastic wrap should always just go right into the trash.</p>
<p>Other non-recyclable plastic films include dark-colored plastic bags, bags with handles or drawstrings, and anything else designed to be wrapped around food. Since you can’t even rinse or recycle these kinds of plastics, it’s better to avoid them altogether and invest in some reusable containers to store leftovers. Another option is to use plastic grocery store shopping bags (though they are increasingly being phased out) to wrap your food leftovers in. Many municipalities and most stores that provide such bags accept them for <a title="recycling" href="http://recyclingposttoday.com/category/recycling/">recycling</a>, so once you’re done with them they can be recycled or returned to the store, after which they can be melted down and incorporated into weather- and rot-resistant window and door frames, decking (such as Trex), palettes, pipes and other long-lasting hard goods. <strong>Like with sandwich and other bags you intend to recycle, make sure plastic grocery bags are clean before you turn them in for recycling.</strong></p>

<p>If you are a Ziploc bag or plastic wrap fanatic but want to do the right thing by the environment, look for plastic food storage film or bags made from biodegradable polymers. Some popular brand names to keep an eye out for at Whole Foods and elsewhere are Eco Wrap, EcoFlex and BioBag. These plastics—some of which are made from agricultural scraps left over from corn crops—can go right in with yard waste or other compostables and will break down over time accordingly just like cardboard or food scraps. With time major brands will undoubtedly be offering similar products.</p>
<p><strong>But even though there may in fact be “greener” plastic out there, reducing our reliance on disposable bags altogether should be the ultimate goal.</strong> Luckily many grocery chains are hip to greening their own operations and image, and are giving away or selling for a nominal amount reusable canvas shopping bags so customers don&#8217;t have to choose between wasting plastic and paper at the checkout line.</p>
<p>(And even better than <strong><a rel="nofollow"  href="http://www.thegoodhuman.com/2010/05/11/on-a-budget-make-a-big-eco-difference-with-only-a-few-bucks/">plastic sandwich bags are fabric versions like the ones here</a></strong> that I have previously talked about.)</p>

			<content:encoded><![CDATA[<p><strong>How&#8217;s this for an idea? </strong> I just came across this in the Heifer&#8217;s <strong><a rel="nofollow"  href="http://www.heifer.org/site/c.edJRKQNiFiG/b.201480/" >World Ark</a></strong> and I wish I had thought of it, but I didn&#8217;t &#8211; it&#8217;s a public service campaign started in 1995 by the Garden Writers Association that aims to have gardeners everywhere plant an extra row of food to be donated to local food banks to help out the needy in your area.  </p>
<p><strong>It took the first five years to reach the major milestone of a cumulative total of one million pounds of donated produce. In the next six years, more than a million pounds of food was donated each year. This is a significant contribution considering that each pound of food makes four meals. In 2005, more than 1.5 million pounds of produce were donated generating meals for over 5.5 million needy recipients. All this has been achieved without government subsidy or bureaucratic red tape — just people helping people. The total produce donations through 2005 reached nearly 10 million pounds of produce to help those in need in communities throughout the U.S. and Canada.</strong></p>

<p><strong>Dear EarthTalk: I always thought eating fish was healthy, but now I’m concerned about mercury in<br />
tuna and other fish. Are there any fish that are still safe to eat?</strong></p>
<p>You should be concerned about contaminants in certain fish, including some kinds of tuna. The non-profit Environmental Defense Fund (EDF) recommends <strong>minimizing consumption of albacore (white) tuna, a large fish that accumulates moderate amounts of mercury in its fatty tissue</strong>. But other kinds of (smaller) tuna, such as skipjack (usually canned as “light”), which accumulates a third the amount of mercury as albacore, are OK to eat in moderation, though consumption by those under age seven should be limited.</p>
<p>To further complicate the issue, some canned light tuna may contain yellowfin tuna, which has mercury levels similar to those of albacore; these products are sometimes but not always labeled as “gourmet” or “tonno”—and their consumption should be limited, even by adults.<br />
Mercury, a known “neurotoxin” (a poison that affects the nervous system), is particularly insidious because it is widespread in our oceans, primarily due to emissions from coal-burning power plants. These smokestacks deposit mercury into waterways, which carry it to the ocean where bacteria convert it into methylmercury. Fish then ingest it with their food and from water passing over their gills. <strong>Generally speaking, bigger, older and large predatory fish (such as sharks, swordfish, tilefish, king mackerel and some tuna) near the top of marine food chains are more likely to have high levels of mercury than fish lower in the marine food chain. </strong></p>

<p>People exposed to high levels or frequent doses of mercury can suffer nervous system disorders, impaired mental development and other health problems. An April 2003 study, published in Environmental Health Perspectives, found that 89 percent of study subjects, chosen because they ate a significant amount of fish, had blood mercury levels above the U.S. Environmental Protection Agency’s (EPA’s) safety threshold of five micrograms per liter. Even though there are health benefits to eating fish (including the intake of healthy omega-3 fatty acids), the EPA advises that young children, pregnant women, nursing mothers and women of childbearing age limit their intake of high-mercury fish to one serving per week at most, while limiting their overall intake of any fish or shellfish to no more than two to three servings, or 12 ounces total, per week.</p>
<p><strong>Mercury isn’t the only harsh pollutant lurking in the ocean.</strong> Industrial chemicals like PCBs and pesticides like DDT are awash in marine food chains around the world. According to EDF, it can take five years or more for women of childbearing age to rid their bodies of PCBs, and 12-18 months to appreciably reduce their mercury levels. <strong>EDF adds that moms who eat toxic fish before becoming pregnant may have children who are slower to develop and learn because fetuses are exposed to stored toxins through the placenta.</strong></p>

It includes links to individual state advisories, which have details on what fish should or shouldn’t be eaten from nearby lakes or coastal areas. Catfish, Pollock, salmon, shrimp and canned light tuna are currently on the EPA’s safe list, as they feed toward the bottom of the food chain and thus have less opportunity to accumulate mercury and other contaminants.</p>

<p>Hope you had a great weekend!!  It sure went by fast. There&#8217;s always so much I want to share with you but so little time&#8230; !!!</p>
<p>The case of Baby C teething is still plaguing my nights&#8230; especially, last night, as I could not get him to sleep until after 10pm.</p>
<p>Which meant that any chance of blogging, flew quickly out the window. Gah!</p>
<p>I&#8217;m gettin&#8217; really pumped about eating more raw foods and have seem to found a little groove goin&#8217; on. I&#8217;m really feelin&#8217; it, physically and emotionally. I&#8217;ve only started to feel this way within the past couple of weeks. I&#8217;m sure it has a little something to do with the season change but maybe not.  Happy Summer, by the way!</p>
<p>This so called &#8220;groove&#8221; has me planning and preparing like no other. Let&#8217;s just say that preparing raw foods and eating them makes me super happy. Ha!</p>
<p>I&#8217;ve been doing a little dabbling lately&#8230; recipes from here and recipes from there &#8230;basically just getting and idea and <em>experience</em>.</p>
<p>Feeling out different techniques, ways, version&#8230;etc.</p>
<p>So much to learn&#8230; *sigh*</p>
